Fox & Fox are a boutique producer of English Sparkling wines, cultivating 30 acres of classic champagne varieties. The Vineyards sit either side of the ancient hilltop village of Mayfield, amongst the rolling hills, woodlands and deep-cut ghylls of the Sussex High Weald. They are surrounded by bluebell woods in springtime and over-flown by Buzzards, Red Kites and other hawks in summer.  This beautiful site represents the unique Sussex countryside at its best.  The vineyard are planted with the classic Champagne varietals of Chardonnay, Pinot Noir and Pinot Meunier, with additional small plantings of Pinot Gris.

The vineyard was planted in 2004 and they have been producing wines since 2009.  I had the opportunity to taste 7 different cuvées and the quality and consistency of the wines left me speechless!  The emphasis is on minimal intervention in the vineyard & light manipulation in the winery.  The production levels are minuscule, as huge attention is taken to getting perfect fruit to the winery.

"Essence is our pure un-oaked Chardonnay. It has become a bit of a cult wine with the critics and a sought after wine by our Private List members. We only ever produce it in very small quantities. It sings of citrus and ripe apples in a glorious burst of flavour. Small bubbles fill the mouth and deliver a refreshingly long finish. Essence is a wine that drinks  well on its own, and offers good ageing potential" - Jonica Fox

Tasting Notes and Scores

Reviewer Score Notes
John Stimpfig 91 This has a bright chalky and flinty minerality. The palate is quite restrained and tight, with salty oyster shell notes alongside good acidity and some ripe bruised apple and citrus fruit. Silver: Decanter World Wine Awards 2018; Silver: IWSC 2018
